I haven't seen any photos of what happens when the load slides forward, I guess a donkey being crushed wouldn't be as comical as one being lifted.

I am sure the front overload happens but from what I have seen in many countries the owners tend to backload because when there is a huge weight on their backs all they can do is stagger along at a slow rate. If there is a light downward load they can get up a trot . Of course the poor buggers can not brake very well so regularly get over run by the cart and sometimes driven to their knees on an emergency stop or steep downhill.

I had a prang with a donkey in Basra in Iraq when he turned in front of me at an intersection but got airborne like the photos and the cart with the flying donkey just kept rolling straight into the front of my UN Landcruiser.

Regardless of loading, 99% of donkey operators in any country are arseholes who flog and mistreat their animals. This includes Santorini Island in Greece where thousands of well heeled fat tourists get carried up 700 odd steps on donkeys that have bleeding strap sores all over them.
